Tex Mex Breakfast Burritos

Start making Quick Cheesy Sauce (or grab it out of the fridge if you have leftovers or are a smarty pants that made it the night before!). Cheddar Daiya would work in a pinch!

Heat a seasoned, but unoiled, cast iron pan over medium heat.

Add:

  • 1 tsp coriander seed
  • 1 tsp cumin seed

Saute until fragrant, then add the tofu:

Grab and break into chunks 1/3 brick of tofu. Note that this should be broken apart NOT chopped, use your hands and get nice chunky chunks (somewhat reminiscent of scrambled eggies).

Add:

  • 1/2 tsp thyme
  • 1/2 tsp turmeric
  • 1/4 tsp paprika

Sauté them together until the tofu is golden on the outside.

Then, add the tex mex veggie and bean mix from yesterday, stir fry until mixed through.

Add into wraps, with or without extra rice on the side, top with the cheezy sauce, cilantro, hot peppers and pumpkin seeds for added iron!
